ABC'S TODDLER MUFFINS


These muffins are as easy as your ABC'S - and absolutely delicious. You and your little one are guaranteed to enjoy - guilt-free.

Yields: 12 full sized muffins AND 12 half sized muffins (24 total, more if you just do mini muffins)

Ingredients:

Dry Ingredients

1.5 C Flour

Scant 1/2 cup of rolled oats

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

Wet/Veggie Ingredients

1 egg

1 ripe banana, mashed

1/3 C Maple syrup

1/2 C apple sauce

1 apple (i used Yellow Delicious)

2 C spinach

1-2 carrots, depending on size (i used 2 small organic ones)

2 tbsp butter, melted or avocado oil

Directions:

1. Mix dry ingredients

2. I used a food processor to shred/puree the apple, spinach, carrots, and banana. Mix all the wet ingredients.

3. Combine dry and wet ingredients.

4. Grease muffin tin trays with your choice of oil or butter - i used coconut oil.

5. Bake at 350 for 10-15 min or until an inserted toothpick comes out clean.

I let them cool before removing them. They're super moist and yummy! Enjoy!
